This is a super popular meatloaf recipe you can easily make at home! A copycat of Cracker Barrel and the perfect replica. This meatloaf has a super flavorful topping and a tender meat mixture.
Ingredients
2 lbs 80% lean ground beef
½ tbsp olive oil
1/2 c. bell pepper, finely diced
1 c. crushed Ritz crackers
2 eggs, whisked
1/2 c. whole milk
1 c. sharp cheddar cheese, shredded
1 teaspoon salt
1/4 teaspoon black pepper
½ c. yellow onion, finely diced
Topping:
2 tablespoons brown sugar
1 teaspoon yellow mustard
1/2-3/4 c. ketchup
How to make Cracker Barrel Meatloaf (Copycat)
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: In a small pan with olive oil, saute the diced peppers and onions for about 5 minutes until tender. Set aside when done.
Step 3: In a large bowl, place the whisked eggs, crushed crackers, onions, bell peppers, cheese, milk, and salt/pepper. Mix well until combined. Then, add the ground beef and mix until just blended.
Step 4: In a loaf, shape the mixture and put it into a loaf pan. Place in the preheated oven and bake for about 30 minutes.
Step 5: In the meantime, mix the topping ingredients. Set aside.
Step 6: After 30 minutes, take the meatloaf out of the oven and brush it with the toppings. Return to the oven and resume baking for 30 to 40 minutes more or until the internal temperature of the meatloaf reaches 155 degrees.
Step 7: Before slicing, allow the meatloaf to rest for about 15 minutes, and make sure the center is 160 degrees.
Step 8: Slice and serve the meatloaf with creamy mashed potatoes. Enjoy!
Notes:
For a super tender and flavorful result, I recommend using a 3-meat combination of ground beef, pork, and veal- equal parts of each.
If desired, you can put the meatloaf over a couple of slices of fresh bread. The bread will soak up any excess grease.
If baking at a higher altitude, meatloaf can take about 15 to 20 minutes longer to bake.
Mashed potatoes, buttermilk biscuits, and roasted green beans are the perfect side to serve with meatloaf.
