All the flavors in this Cracker Barrel Meatloaf are perfectly balanced! It is total comfort food that is perfect to eat pretty much any time of the day! My family loves eating this with my homemade mashed potatoes. Try this recipe now. It is so worth it!
Ingredients:
2 Eggs, whisked
1 c sharp cheddar cheese, shredded
1 teaspoon salt
2 lbs. 80% lean ground beef
1/4 teaspoon black pepper
½ c yellow onion, finely diced
1 c crushed Ritz crackers
1/2 c whole milk
1/2 c bell pepper, finely diced
½ tbsp olive oil
For the Topping:
2 tablespoons brown sugar
1 teaspoon yellow mustard
1/2-3/4 c ketchup
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a small pan on the stove and turn the heat to medium. Add olive oil and allow it to become hot.
Add the onions and peppers, then sauté for 5 minutes or until soft. Remove from the heat.
In a large mixing bowl, add bell peppers, eggs, salt, pepper, milk, cheese, and onions. Whisk everything until well blended.
Add the ground beef, then stir just until combined.
Shape the mixture into a meatloaf, then put it into a pan.
Place the pan in the preheated oven and bake the meatloaf for about half an hour or until done.
In a mixing bowl, add all the ingredients for the topping and stir until well blended.
Brush the meatloaf with the topping mixture, then bake it for another 30 to 40 minutes.
Remove the meatloaf from the oven and allow it to rest for a few minutes at room temperature. Slice into even servings.
Serve with mashed potatoes. Enjoy!
Note:
This meatloaf can last up to 3 months in the freezer.
