This meatloaf recipe is probably one of the best I have ever tried! You need this in your life, I’m telling you. Enjoy!
Ingredients:
Meatloaf:
1 1/2 pound (24 oz) 80/20 ground beef
3 large eggs, beaten
1 c crushed Ritz crackers, about 1 1/2 sleeves
1 small yellow onion, finely diced
1/2 green bell pepper, finely diced (you can use red too)
3 c fresh shredded cheddar cheese
1 tsp ground oregano
1 tsp ground thyme
1 tsp garlic powder
2 tbsp fresh parsley, finely chopped
1/2 c whole milk
1 tbsp Worcestershire sauce
1/2 tsp salt
1/8 tsp ground black pepper
Topping:
1/2 c ketchup
1/2 c light brown sugar, packed
1 tsp yellow mustard
1 tsp apple cider vinegar
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: In a large mixing bowl, add the ground beef and break it with a spoon until crumbly.
Step 3: Add the Meatloaf ingredients and mix everything until well combined.
Step 4: Cover the baking dish with foil and apply it with cooking spray.
Step 5: Move the mixture into a 9×5-inch pan.
Step 6: Place the meatloaf inside the preheated oven and bake for about 30 minutes.
Step 7: Meanwhile, in a small mixing bowl, add all the ingredients for the topping. Stir until well mixed.
Step 8: Remove the meatloaf from the oven and immediately spread the topping over.
Step 9: Put the meatloaf back to the oven and bake for 30 minutes more or until golden brown.
Step 10: Remove the meatloaf from the oven and allow it to sit at room temperature for about 10 minutes.
Step 11: Slice into small bites.
Step 12: Serve and enjoy!
