Ingredients:
2 (2 pounds) beef chuck roast, cut into 1/2-inch thick strips
½ cup red wine
1 teaspoon salt
½ teaspoon ground black pepper
1 tablespoon extra-virgin olive oil
2 tablespoons butter
1 large onion, diced
3 cloves garlic, minced
2 tablespoons butter
1 cup sliced mushrooms
¼ cup butter
¼ cup all-purpose flour
1 ⅓ cups beef stock
1 tablespoon Worcestershire sauce
1 teaspoon prepared yellow mustard
2 teaspoons crushed red pepper flakes
⅓ cup sour cream
1 (3 ounces) package cream cheese, softened
Directions:
Step 1: In a large mixing bowl, add the beef, red wine, black pepper, and salt. Stir until well mixed and let it sit for 10 minutes to marinate.
Step 2: Remove the beef and use a paper towel to dry them. Set aside the marinade.
Step 3: Place a large skillet on the stove and turn the heat to medium. Add olive oil and allow it to become hot.
Step 4: Add the beef and cook for 5 to 7 minutes or until the colour turns brown.
Step 5: Place the beef on a clean plate.
Step 6: Remove the excess oil from the skillet and add in 2 tablespoons of butter.
Step 7: Add garlic, onion, and a little salt. Stir and cook until the garlic is aromatic and the onion is translucent.
Step 8: Transfer the mixture on the plate with the beef.
Step 9: Add 2 tablespoons of butter into the same skillet and add in mushrooms. Cook for 10 minutes or until the mushrooms are soft.
Step 10: Transfer the cooked mushrooms into a small bowl.
Step 11: Add another 1/4 cup of butter into the skillet.
Step 12: Add flour and stir for 4 minutes or until done.
Step 13: Add the beef stock gently and allow it to boil. Reduce the heat to low and add in the reserved marinade, mustard, red pepper flakes, Worcestershire sauce, and the beef and onion mixture.
Step 14: Simmer for 1 hour, covered.
Step 15: Season with salt and pepper to taste if needed.
Step 16: Add in the sour cream, cream cheese, and mushrooms. Cook for another 5 minutes, then remove from the heat.
Step 17: Serve and enjoy!
