The easiest and the best chicken dinner! Juicy chicken breasts smothered in a delightful, hearty garlic sauce with tons of cheese and garlic. Serve this over mashed potatoes with a side of steamed broccoli for a complete meal that your entire family will love!
INGREDIENTS
Chicken:
3 tbsp Vegetable oil
2 tbsp Unsalted butter
2-3 Chicken breasts (to make 4 to 5 pieces: skinless and halved horizontally to make 4-5)
2 tsp Garlic powder
4 tbsp Fresh grated Pecorino Romano cheese
2 tsp Salt
4 tbsp All-purpose flour
1 tsp Ground black pepper
Sauce:
13-14 Garlic cloves
1 ¼ c. Chicken stock or broth
1 Onion (finely chopped)
2 tbsp (or as needed) Fresh parsley – finely chopped
1 ¼ c. Half & half or heavy cream
½ c. Freshly grated Pecorino Romano cheese
How to make Creamy Garlic Chicken Breasts
Step 1: On a cutting board, place the chicken fillets and pat them dry. On both sides, season with ground black pepper, salt, and garlic powder.
Step 2: In a shallow bowl, combine the flour and Pecorino Romano cheese. In the flour-cheese mixture, dredge the chicken and shake the excess off.
Step 3: Heat the vegetable oil and butter in a large non-stick pan/skillet over medium-high heat. Then, add the chicken and fry for about 5 minutes per side until golden and completely cooked. To avoid overcrowding the pan, you might need to fry the chicken in batches. To a plate, transfer the cooked chicken and set aside.
Step 4: Saute the onion in the same pan/skillet on medium heat until tender. Smash about 7 to 8 garlic cloves using a heavy knife, then add to the pan along with the whole garlic cloves. Saute for another 3 minutes until aromatic.
Step 5: Pour in the chicken stock, scraping the browned bits from the bottom of the pan. Let this simmer over medium-low heat for about 2 to 3 minutes.
Step 6: Add the half-and-half and allow the sauce to simmer for about 2 minutes. Next, add the Pecorino Romano cheese and cook further until melted. To taste, season with black pepper and salt.
Step 7: Place the chicken back into the pan and garnish it with some fresh parsley.
Step 8: Remove from the heat and serve the Creamy Garlic Chicken Breasts right away over mashed potatoes, cacio e pepe, Instant Pot basmati rice, or steamed broccoli. Enjoy!
