Ingredients:
2 tbsp olive oil
3-4 cloves garlic minced
4 small-medium chicken breasts or 2 large halved
1 tbsp Italian seasoning or oregano
1/2 c parmesan cheese grated
1 c light cream or heavy cream
1 c spinach chopped (optional)
salt and pepper to taste
Directions:
1. Rub each chicken breast with salt and pepper until well-seasoned.
2. Place a large heavy skillet on the stove and turn the heat to medium.
3. Add olive oil and allow it to become hot.
4. Add the chicken breasts and cook each side for 5 minutes or until they turn golden brown.
5. Remove the chicken breasts from the pan onto a clean plate.
6. Turn the heat down to low, then add the garlic. Sauté until aromatic.
7. Add the Italian seasoning, Parmesan cheese, and cream. Stir until well blended.
8. Add the cup of spinach, then stir until well mixed. Let it simmer for about 2 minutes.
9. Put the chicken breasts back into the pan and spoon the delicious sauce over until well coated. Simmer for one more minute.
10. Serve hot over pasta. Enjoy!
