If you are craving Italian food, then you need to try this recipe! This Creamy Sausage Tortellini with Spinach, Tomatoes, and Mozzarella cheese sauce will surely turn your simple family dinner into a very special one! In less than an hour, this dish is ready for serving. Enjoy!
Ingredients:
2 c cheese tortellini
2 c spinach uncooked
16 ounces Italian pork sausage or regular, fresh, uncooked, I used Jimmy Dean brand
salt to taste
¼ c Mozzarella cheese, shredded
14 ounces diced tomatoes
1 c half and half
¼ tsp crushed red pepper flakes
⅛ tsp paprika
Directions:
1. Place a large skillet on the stove and turn the heat to medium.
2. Add the sausage, then cook for a few minutes until crumbly and brown. Discard any accumulated grease.
3. Add the tomato slices into the same skillet, then cook for a few more minutes until soft.
4. Add paprika and red pepper flakes, then cook, simmer for a few more minutes.
5. Place a pan with water on the stove and turn the heat to high. Allow the water to boil.
6. Add the tortellini, then refer to the directions provided on the package on how to cook it. Drain.
7. Put the cooked tortellini into the pan with the sausage, then toss until well coated.
8. Add the spinach and half & half, then allow the mixture to boil.
9. Turn the heat down to low, then cover the pan with a lid. Cook the spinach until wilted completely.
10. Stir in 1/4 cup of mozzarella cheese until melted completely.
11. Add more salt, pepper, crushed red pepper flakes, and paprika if necessary. Make sure to taste first before adding anything.
12. Serve and enjoy!
