I love these Crispy Coconut Chicken Tenders so much! I am so glad that I gave this recipe a try because it is just too perfect! Ingredients:
2 Eggs
1 lb. chicken tenderloins – or chicken breasts, cut into strips
½ tsp salt
¼ tsp pepper
2 tbsp water – or milk
½ tsp chilli powder
½ c flour
oil for frying – see notes for alternate baking method
⅔ c panko bread crumbs
⅔ c shredded sweetened coconut flakes
sweet chilli sauce – for serving
sea salt flakes – for garnish, optional
Directions:
1. Bowl 1: Mix chilli powder, flour, salt, and pepper.
2. Bowl 2: Mix water/milk and eggs.
3. Bowl 3: Add coconut flakes.
4. Bowl 4: Add panko breadcrumbs.
5. Coat each of the chicken pieces into the first bowl with the flour mixture. Coat them again with the egg wash, coconut flakes, and breadcrumbs. Shake off any excess.
6. Place a large skillet on the stove and turn the heat to medium-high.
7. Add 1-inch of oil and allow it to become hot.
8. Add the chicken pieces and cook each side for 3 minutes or until they turn golden brown. Remove from the skillet onto a clean plate lined with paper towels to drain excess oil.
9. Sprinkle sea salt flakes over the chicken tenders.
10. Serve with sweet chilli sauce. Enjoy!
