Ingredients:
1 lb chicken thighs cut into 1-inch chunks
1/3 c cornstarch
1/2 c canola oil
3 cloves garlic minced
1 tbsp ginger minced
1/2 tsp red pepper flakes
Sauce:
2 tbsp soy sauce
1/2 c honey
zest of one large lemon
1/2 lemon juiced
1/2 c water
1 tbsp cornstarch
Garnish:
green onions
sesame seeds
lemon zest
Directions:
1. In a resealable bag, add the chicken thighs and cornstarch. Shake the bag until the chicken thighs are well coated.
2. In a mixing bowl, add all the ingredients for the sauce. Whisk until well combined.
3. Place a large pan on the stove and turn the heat to medium-high.
4. Add vegetable oil and allow it to become hot.
5. Add the chicken and cook until they turn golden brown.
6. Remove the chicken from the pan onto a clean plate.
7. Leave about 1 tbsp of oil from the pan and discard the rest.
8. Add ginger, garlic, and red pepper flakes. Saute until aromatic.
9. Put the chicken back to the pan and toss until well combined.
10. Cook for about a minute or until the sauce becomes thick.
11. Remove from the heat and sprinkle sesame seeds, lemon zest, and green onions on top.
12. Serve hot over rice and enjoy!
