Ingredients:
Chicken:
1-lb boneless skinless chicken thighs, cut into 1-inch pieces, or chicken breasts
1 tsp salt
1/2 c cornstarch
1 1/2 c flour
1 Egg, beaten
1 tbsp oil, canola oil, or similar
1 ¼ c water
vegetable oil, for frying
Vegetables:
1 red bell pepper, cut into 1″ pieces
1 green bell pepper, cut into 1″ pieces
1 medium yellow onion, cut into 1″ pieces
1 tbsp oil, canola oil, or similar
1 c pineapple chunks, fresh, or canned/frozen
Sweet and Sour Sauce
1/2 c sugar
¼ c rice vinegar, or white vinegar
2 tsp garlic, minced, or garlic powder
2 tbsp soy sauce, low sodium recommended
1/4 c ketchup
2 tbsp cornstarch, mixed with 2 tbsp water
sesame seeds, optional garnish
Directions:
Step 1: Add the flour, cornstarch, and salt to a large mixing bowl. Whisk until well combined.
Step 2: Add 1 egg, water, and 1 tablespoon of oil. Whisk until well blended.
Step 3: Add the sliced chicken bits into the batter and toss until well coated.
Step 4: Leave the chicken in the batter to marinate for at least 10 minutes at room temperature or 1 hour in the refrigerator.
Step 5: Place a medium saucepan on the stove and turn the heat to about 175 degrees F.
Step 6: Add enough oil to submerge the chicken bits and allow them to become hot.
Step 7: Add the chicken and fry until golden brown for about 4 minutes.
Step 8: Remove the fried chicken bits and set them aside.
Step 9: Place a skillet on the stove and turn the heat to medium-high.
Step 10: Add 1 tablespoon of oil and allow it to become hot.
Step 11: Add the onion and bell pepper. Sauté for about 2 minutes or until translucent.
Step 12: Add the pineapple and all the sauce ingredients. Stir until just mixed and let it simmer. Add more seasonings if needed.
Step 13: In a small mixing bowl, add the cornstarch and water. Stir until well mixed, then pour it into the skillet.
Step 14: Simmer for about 3 minutes or until the texture of the sauce becomes thick.
Step 15: Put the fried chicken back to the skillet and stir until well coated with the sauce.
Step 16: Remove the skillet from the heat.
Step 17: Sprinkle sesame seeds on top.
Step 18: Serve and enjoy!
