This was the richest beef stew I have ever tasted! With these very basic ingredients, you can have the best lunch or dinner today. Try this recipe now and I promise that you will not be disappointed. Enjoy!
Ingredients:
For the meat
1.5 lbs. beef stewing meat in chunks
2 tbsp oil
2 tbsp flour
1-2 tsp salt or less, depending on what kind of stock you’re using
black pepper to taste
For the gravy
2 c beef stock
2 cloves garlic sliced
2 large yellow onions cut into wedges
4 tbsp tomato paste
¼ c red wine OR use more stock
1 tbsp maple syrup
2 tbsp Worcestershire sauce
2 tsp Italian seasoning
For the veggies
4 large carrots peeled, ends trimmed, and cut into chunks
½ c frozen peas no need to defrost
4 large celery sticks were trimmed and thickly sliced
½ lb. brown mushrooms cleaned and quartered
3 large waxy potatoes peeled and cut into chunks
Directions:
1. Place a deep skillet on the stove and turn the heat to medium-high.
2. Add oil and allow it to become hot.
3. Add the beef pieces and cook until brown. Sprinkle salt and pepper to taste.
4. Sprinkle flour over the meat and stir until well coated. Cook for a few more minutes, then transfer them into a 6-quart slow cooker.
5. In the same skillet, add a bit of oil and allow it to become hot.
6. Add the garlic and onions, then sauté until aromatic and soft.
7. Add the tomato paste and Italian seasoning. Stir and cook for another minute.
8. Pour in the wine and scrape the bottom of the skillet to get the brown bits.
9. Simmer for a minute or until the texture of the sauce becomes thick.
10. Pour in the stock, maple syrup, and Worcestershire sauce. Stir until well blended and allow the mixture to boil. Turn off the heat.
11. Put the carrots, celery, mushrooms, and potatoes over the meat pieces.
12. Pour in the sauce over everything.
13. Seal the slow cooker and cook for about 8 hours on a low setting or 4 hours on a high setting.
14. Add the peas and stir until well mixed. Add more seasonings if needed.
15. Serve hot and enjoy!
