Ingredients:
5 cloves garlic, smashed
⅓ c chicken broth
½ tsp onion powder
1 tsp paprika
4 tbsp olive oil, divided
3 tbsp balsamic vinegar
3 lbs. pork loin
1 tsp salt
¼ tsp fresh ground pepper
½ tbsp Italian seasoning
Directions:
1. Use paper towels to pat dry the pork loin.
2. In a mixing bowl, add onion powder, black pepper, salt, and paprika. Whisk until well blended.
3. Sprinkle the mixture over the pork loin, then rub until well coated. Make sure to season it generously.
4. Place a large skillet on the stove and turn the heat to medium.
5. Add 1 tbsp of olive oil and allow it to become hot.
6. Add the pork loin, then sear each side for a few minutes until they turn brown.
7. Add the garlic, olive oil, and balsamic vinegar into a food processor. Pulse until well blended.
8. Add the Italian seasoning, then stir until well blended.
9. Lay the chicken into a slow cooker, as well as the pork loin with the fatty part facing upwards.
10. Brush each pork loin with the balsamic mixture.
11. Cover and seal the slow cooker, then cook everything for about 5 hours on a low setting or 3 hours on a high setting until done.
12. Transfer the pork loin onto a flat surface, then cover it with foil to keep warm. Allow the pork to rest for a few minutes at room temperature to incorporate all the flavours.
13. Slice the pork into even pieces.
14. Serve with your delicious sauce. Enjoy!
