Fall apart tender, juicy, and super flavorful. This Crock Pot Garlic Balsamic Pork Loin is a low-maintenance and easy recipe for the best pork loin roast! I love serving this with roasted green veggies such as broccoli or roasted green beans for a restaurant-quality dinner at home!
INGREDIENTS
5 cloves garlic, smashed
3 lbs. pork loin
½ tsp onion powder
4 tbsp olive oil, divided
¼ tsp fresh ground pepper
⅓ c. chicken broth
3 tbsp balsamic vinegar
½ tbsp Italian seasoning
1 tsp salt
1 tsp paprika
How to make Crock Pot Garlic Balsamic Pork Loin
Step 1: Using paper towels, pat dry the pork.
Step 2: In a small bowl, place the salt, paprika, onion powder, and black pepper. Mix well until blended, then rub this on the entire pork.
Step 3: In a large skillet over medium heat, add tbsp olive oil. Once hot, add the pork and sear for a few minutes per side until golden brown.
Step 4: Place the rest of the olive oil, balsamic vinegar, and garlic in a blender or food processor. Pulse until well blended, and you have a thick mixture. Then, add the Italian seasoning and blend further until well incorporated.
Step 5: Into the insert of a slow cooker, pour in the chicken broth. In the slow cooker, place the pork loin, fat side up. On the entire pork loin brush the prepared balsamic mixture using a pastry brush. Cover and set to cook for 4 to 5 hours on low or 3 hours on high. Once the internal temperature of the pork reaches 145 degrees F, the pork is done.
Step 6: To a cutting board, transfer the pork and tent with foil. Before slicing, let the pork rest for about 15 minutes.
Step 7: Slice the pork loin and serve. Enjoy!
