I am so glad that I gave this recipe a try because I never would have tasted perfection! This was my first time cooking Gumbo! A big thanks to my dear sister, Olive, for this incredible recipe! Ingredients:
1 pound of Chicken Breast cut into bite-size pieces
1 pound of Smoked Sausage kielbasa, farmers sausage, garlic sausage, etc.
1 pound Shrimp raw and shells removed (I left tails on for more flavour)
1 Onion diced
1 Green pepper diced
1 Hot pepper (jalapeno, serrano, scotch bonnet, habanero, etc.) (optional)
3 ribs Celery diced
28 ounces diced tomatoes 28 oz
3 teaspoons Garlic minced
2 cups Chicken broth
1 tablespoon Cajun spice or more if you prefer
1 teaspoon thyme
1 teaspoon Oregano
1 ⅓ cup Rice cooked
Directions:
Step 1: Add everything into the slow cooker aside from the rice and shrimp. Stir until well combined.
Step 2: Cover the slow cooker and cook for 6 to 7 hours on a low setting.
Step 3: 1 hour before cooking time ends, season the shrimp with a little salt and put them into the slow cooker.
Step 4: 30 minutes before cooking time ends, add the rice and stir until well combined. Cook until soft.
Step 5: Serve hot with crusty bread. Enjoy!
