Ingredients:
4 tbsp unsalted butter
1/3 c all-purpose flour
1 medium yellow onion, diced
6 garlic cloves, minced
10 slices of cooked bacon, diced
12 oz evaporated milk or half-and-half or heavy cream, 1 12 oz. can
2 c shredded sharp cheddar cheese
1/2 c sour cream
3 c chicken broth
salt and pepper to taste
1 tbsp dried parsley
2 lbs. Yukon gold potatoes, peeled and diced

chives, extra shredded cheddar cheese, and bacon
Directions:
In your slow cooker, add bacon, potato slices, chicken broth, minced garlic, parsley, onions, salt, and pepper. Stir everything until well incorporated.
Cover and seal the slow cooker, then cook for about 6 to 8 hours on a low setting or 3 to 4 hours on a high setting.
Place a saucepan on the stove and turn the heat to medium. Add butter and allow it to melt.
Add flour, then whisk and cook for about a minute to remove the raw taste. Add milk or cream, then stir until well blended.
Reduce the heat to low, then simmer the mixture until the texture becomes thick. Make sure to stir from time to time.
Transfer the mixture into the slow cooker, then stir until well blended.
Mash 3/4 of the potatoes with a masher. Add sour cream and shredded cheese, then stir until well blended. Add salt and pepper to taste.
Cook the soup for another 30 minutes on a low setting.
Serve and enjoy!
Notes:
Make sure to add more chicken broth if the texture of the soup is too thick.
Top each serving with sour cream, cheese, and bacon.
Place any leftovers in an airtight container, then put them in the fridge. They can last up to 3 days. Reheat for a few minutes before serving again.
