How to make Crying Tiger
Step 1: To make the dipping sauce, whisk the fish sauce, lime juice, tamarind (if using), toasted rice powder, Thai pepper, coconut sugar, cilantro, green onion, and water until well combined. Taste and adjust to your preference. If needed, add more water to dilute the sauce or extra lime juice, sugar, or fish sauce.
Step 2: On the stove, heat a grill or cast iron skillet. In the meantime, pat the steaks dry. To the hot grill or skillet, place the seasoned steaks and cook for a few minutes o per side until the preferred temperature is reached.
Step 3: Before slicing, let the steaks rest for about 10 minutes.
Step 4: Serve with the dipping sauce. This dish pairs well with lettuce leaves, cabbage leaves, cucumber slices, Thai Sticky Rice, or regular rice. Enjoy!
