The ultimate side dish! These creamy and oh-so-cheesy au gratin potatoes are the perfect side dish. Super easy to whip up and makes a delightful side during the holiday or any day!
Ingredients
½ white or yellow onion, cut into slices
6-7 medium Yukon gold potatoes, thinly sliced into 1/8th inch rounds (3 lbs gold potatoes)
Sauce:
¼ c. all-purpose flour (or use whole wheat, all-purpose, or gluten-free 1:1 flour)
2 tbsp salted butter
1 1/2 c. unsweetened almond milk (or regular, skim, or whole milk)
½ tsp garlic powder
8 oz. sharp cheddar cheese (2 heaping c. shredded cheddar cheese)
Freshly ground black pepper
¾ tsp salt, plus more to taste
Topping:
¼ c. grated Parmesan
1/2 c. Gruyere cheese (or swap with more sharp cheddar)
Garnish:
Fresh chopped parsley
How to make Dad’s Creamy & Cheesy Au Gratin Potatoes
Step 1: Prepare the oven. Preheat it to 375 degrees F. Using a non-stick cooking spray (butter or oil), grease a 2-quart square baking dish or an 8 x 12-inch baking dish.
Step 2: In three tight slanted rows, place the sliced potatoes, leaving enough space so the potato slices are a little slanted. In between the rows and on top of the potatoes, add the onion slices.
Step 3: To make the sauce, melt 2 tbsp butter on medium heat. To the melted butter, stir in a little flour and gradually add in the milk, alternating with the flour and mixing well to remove any lumps. Bring the mixture to a simmer until it has a creamy gravy consistency.
Step 4: Adjust the heat to low and whisk in the shredded cheddar cheese along with the garlic powder, salt, and pepper. If needed, add extra salt and pepper to taste.
Step 5: Over the potatoes and onions, evenly pour the sauce. Tent the pan using foil and place it in the preheated oven. Bake the for about 45 minutes. Then, uncover and sprinkle half c. shredded Gruyere or more cheddar on top and 1/4 c. Parmesan. Continue baking for another 30 to 45 minutes or until the potatoes are easily pierced with a fork and the top is golden brown.
Step 6: Before serving, garnish with some fresh chopped parsley.
Notes:
Over the potatoes, you can add 8 ounces of chopped cooked bacon if desired before adding the cheese sauce. Alternatively, you can stir the chopped bacon into the cheese sauce.
If making ahead, assemble the potatoes up to 3 days in advance. Using foil, tent the pan and store it in the fridge until ready to bake. Baking time may take a little longer (15 minutes more).
You can store the entire pan or individual portions (in airtight containers) of the au gratin potatoes in the fridge for up to 5 days.
In the microwave, reheat the individual portions. Or in the oven, until heated through.
