This 30-minute dish is what you just need today! It is the perfect dish to prepare if you have a small amount of time to cook for your family but still want it to be a good one! This recipe can yield up to 8 servings!
Ingredients:
7 to 8 oz. canned green chiles, don’t drain (I used mild heat)
4 garlic cloves, peeled and finely minced
32 oz. (4 c) of low-sodium chicken broth
two 15 oz. cans of cannellini beans were drained and rinsed
1 tbsp lime juice
3 tbsp olive oil
3 c sweet Vidalia or yellow onion, peeled and diced small (about 2 medium/large onions)
4 c shredded cooked chicken (use about 1 whole store-bought rotisserie chicken to save time; or roast or cook your chicken in a skillet)
1 large jalapeno pepper (about 4 to 5-inches long), diced very small (the seeds are where the heat is concentrated; included or discard them based on preference)
tortilla strips, chips, crackers, diced avocado, shredded cheese, and/or sour cream; all are optional for garnishing
1 tsp dried oregano
1 tbsp cumin
1 tsp black pepper
1/4 tsp cayenne pepper, optional and to taste
1 tsp salt, or to taste
1/3 c fresh cilantro leaves, finely minced
1/2 tsp red chili flakes
Directions:
Place a large Dutch oven on the stove and turn the heat to medium-high. Add olive oil and allow it to become hot.
Add the green chilis, onion, and jalapeno. Sauté for a few minutes until soft.
Add garlic, then sauté for about a minute or until aromatic.
Add the chicken, beans, and chicken broth. Stir everything until well incorporated.
Pour in the bean mixture together with the beans, chili flakes, lime juice, oregano, salt, pepper, and oregano. Stir everything until well blended and allow the mixture to boil for 10 minutes. Taste and add more seasonings if needed.
Add cilantro and stir until well combined, then allow it to boil again. Remove from the heat.
Top each serving with your favorite toppings.
Serve right away and enjoy!
Notes:
Place any leftovers in an airtight container, then place them in the fridge. They can last for 5 to 7 days.
