Burrito is a must at home, and this baked burrito in a casserole form is an amazingly easy dinner option loaded with ground beef and tons of cheese. This burrito casserole is a one-dish meal that is a favorite at any gathering! If you love burritos and planning on feeding a big crowd, this no-fuss burrito casserole version is worth the try. This casserole blends all the exciting Tex-Mex flavors that we all love with tortilla, ground beef, and cheese. This recipe is also a great addition to your meal plan. You can even make this casserole in advance and freeze it. When ready to bake, pop it in the oven frozen and bake until done.
Ingredients
1 small onion, chopped
1 lb of ground beef
1 pack of taco seasoning
1 can cream of mushroom soup, undiluted
1 can of refried beans
½ c. sour cream
2 ½ c. of shredded Mexican blend cheese
1 pack of large flour tortillas
HOW TO MAKE AN EASY BURRITO CASSEROLE
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: In a large skillet, cook the ground beef and onion until the beef is brown. Drain the excess grease before adding the taco seasoning and refried beans. Continue to cook until heated through.
Step 3: In another bowl, combine the mushroom soup with sour cream. In the bottom of a baking dish, spread half of the mushroom mixture. On top, place 3 layers of tortillas, tearing them if needed and overlapping the pieces. Over the tortillas, spread the ground beef mixture and sprinkle with 1 c cheese. Do the same layers, ending with the rest of the cheese.
Step 4: Place in the preheated oven and bake for about 20 minutes or until the cheese has melted.
Step 5: Remove from the oven when done, and serve the burrito casserole immediately. Enjoy!
Tips:
You can prep the ingredients in advance and keep the casserole in the freezer. When ready to serve, pop it in the oven for 45 to 60 minutes at 375 degrees. No need to thaw.
