Ingredients:
8 tablespoons unsalted butter, melted
1 c plain yoghurt or buttermilk
1 ½ c chocolate chunks or chocolate chips
2 extra-large Eggs
9 ½ ounces all-purpose flour about 2 c
3 ½ ounces cocoa powder about ¾ c
1 ½ c sugar
½ teaspoon baking soda
1 tablespoon vanilla extract
1 tablespoon baking powder
½ teaspoon sea salt
Directions:
1. Add cocoa powder, baking soda, salt, baking soda, and flour into a large mixing bowl. Whisk until well blended.
2. Add the chocolate chunks into the bowl with the dry ingredients, then toss until well coated.
3. Create a hole or a well in the center of the flour mixture, then add the vanilla and eggs to it. Whisk everything until well combined.
4. Add the remaining ingredients, then mix until just incorporated.
5. Cover batter with plastic wrap, then place the bowl in the fridge to chill for at least an hour or overnight.
6. Prepare the oven and preheat to 218 degrees C or 425 degrees F.
7. Add the batter into the muffin cups and fill them to about 3/4.
8. Place the muffin cups in the preheated oven and bake the batter for about 6 to 10 minutes or until done.
9. Turn the heat down to about 350 degrees F, then bake the muffins for another 30 minutes or until a toothpick comes out clean after inserting it in the middle.
10. Remove the muffins from the oven and allow them to rest for a few minutes at room temperature.
11. Serve and enjoy!
