You only need one pan for this recipe. The juiciness of this French Onion Stuffed Chicken is awesome! This is a must-try recipe! Caramelized onions and a generous amount of cheese, you will surely love this!
Ingredients:
1/4 c freshly grated Parmesan cheese
A pinch each of salt and pepper
4 boneless, skinless chicken breasts, butterflied
2 tbsp olive oil
1 c shredded mozzarella or gruyere cheese (or a mix of both!)
3 tbsp butter
1 tsp fresh thyme
A few sprigs of fresh thyme
5-6 large onions, thinly sliced
1/3 c chicken or beef stock
Directions:
Place a cast-iron skillet on the stove and turn the heat to medium. Add butter and allow it to melt.
Add the onions into the hot skillet, then cook for a couple of minutes until caramelized. Make sure to stir constantly. Add salt, fresh thyme, and pepper to season.
Transfer the caramelized onions onto a clean plate.
In a mixing bowl, add the shredded cheese. Stir until well blended.
Stuff each chicken breast with the caramelized onions and shredded cheeses. Secure each stuffed chicken with toothpicks.
In the empty skillet, add oil and allow it to become hot.
Add the stuffed chicken breasts into the skillet, then cook each side for a few minutes until they turn brown. Be careful not to let the stuffing come out. Transfer them onto a clean plate.
In the same skillet, add chicken stock and the rest of the onions. Scrape the bottom of the skillet to get the browned bits and stir until well incorporated.
Place the stuffed chicken back into the skillet, then toss until coated with sauce.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Transfer the skillet to the preheated oven and bake the stuffed chicken for 20 minutes. Remove from the oven. Discard the toothpicks.
Serve and enjoy!
