If these heavenly treats do not satisfy your cravings today, then I don’t know what will! These Easy Pineapple Coconut Squares are insanely delicious! The Coconut Pineapple glaze is my favorite in this recipe. It gives a very refreshing flavor to each bite! You just have to try this recipe and taste it yourself. Enjoy!
Ingredients:
FOR THE SHORTBREAD BASE:
½ c butter
¼ c sugar
1 ¼ c flour
FOR THE TOPPING:
1 can crushed pineapple (14 oz. can unsweetened crushed pineapple) (drain well and squish excess liquid out with your hands) (410 grams)
½ c sugar
½ c shredded or flaked coconut (divided) (I used flaked)
1 Egg
1 tbsp butter
Directions:
For the Shortbread Base:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Add sugar, butter, and flour into a mixing bowl. Beat for a few minutes until it looks like coarse crumbs.
Transfer the batter to an 8-inch baking pan and spread it evenly.
Place the pan in the preheated oven and bake the batter for about 15 minutes or until done.
For the Topping:
Add egg, butter, and sugar into a mixing bowl. Beat until well incorporated.
Add 1/4 cup of coconut and drained pineapple, then stir until well combined.
Pour the mixture on top of the base and spread it evenly.
Scatter 1/4 cup of the coconut on top of the base.
Place it in the preheated oven and bake for 25 to 30 minutes or until done.
Remove from the oven and allow it to rest at room temperature.
Slice into even squares.
Serve and enjoy!
Note:
Place any leftovers in an airtight container, then place them in the fridge.
