I love easy and quick recipes, and this sheet pan dinner is another delectable weeknight meal I can throw together in under thirty minutes! Tender, juicy pork chops that are seasoned perfectly and baked to perfection with potatoes, green beans, and baby carrots. It’s already a complete meal baked in a single pan!
Ingredients
Pork chops:
4 medium boneless pork chops
2 tbsp olive oil (use less if desired)
2 tsp brown sugar
1 tsp garlic powder
1 tbsp smoked paprika
salt and pepper (to taste)
Vegetables:
2 tbsp olive oil (use less if desired)
4-6 medium potatoes, chopped into small 1-inch chunks
1 c. frozen green beans
2 tsp lemon juice
1 c. frozen baby carrots
1 tsp garlic powder
fresh parsley for garnish (if desired)
2 tsp dried parsley (or freshly chopped)
salt and pepper (to taste)
How to make Easy Pork Chop Sheet Pan Dinner
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: In a small bowl, place the olive oil, paprika, brown sugar, garlic powder, and salt and pepper. Mix well to make the paste.
Step 3: On both sides of the pork chops, rub the mixture. Set aside.
Step 4: To a large sheet pan, add the chopped potatoes, baby carrots, and green beans. Drizzle with olive oil and lemon juice. Sprinkle with garlic powder, parsley, and season with salt & pepper. Toss well.
Step 5: On the sheet pan, arrange the veggies, laying them as flat as possible. On top, nestle the pork chops.
Step 6: In the preheated oven, place the sheet pan. Bake the pork chops for about 20 minutes or until the internal temperature of the chops reaches 145 degrees F.
Step 7: Remove from the oven when done and serve the sheet pan dinner right away garnished with fresh parsley (optional). Enjoy!
