This easy recipe is a must and a keeper! These salmon patties are seriously easy to throw together. They are made with canned salmon along with other simple ingredients. One bite, and you’ll never stop munching!
I make this recipe using canned salmon, but you are welcome to use fresh salmon if desired. Note that a 15-ounce can of salmon is equivalent to a pound of fresh salmon. Bake the fresh salmon beforehand. To do this, drizzle the salmon with olive oil and season with salt and pepper. Pop in the oven for about 15 minutes at 425 degrees F. To store, lay the uncooked salmon patties side by side on a baking sheet and flash freeze for 1 to 2 hours. Then, into freezer bags, divide the frozen salmon patties and store them in the freezer. Thaw in the fridge and bake or fry when ready to serve.
INGREDIENTS
olive oil or vegetable oil for frying
15 ounces of canned salmon – large bones removed
⅓ c. shredded Parmesan cheese
½ c. breadcrumbs
2 tablespoons Dijon mustard
1 small bell pepper, finely diced
2 tablespoons mayonnaise
2 tablespoons chopped scallion
2 eggs
salt to taste
How to make Easy Salmon Patties
Step 1: Into a medium mixing bowl, place the salmon. Using a fork, gently flake the salmon. Then, add the remaining ingredients and toss well.
Step 2: With your hands, shape small patties using a half-cup as a measure.
Step 3: To fry, start heating oil in a large skillet on medium heat. Make sure to use enough oil to cover the bottom of the skillet. Fry the patties for about 5 minutes per side until they are crispy and completely cooked.
To bake, drizzle olive oil onto a large non-stick cookie sheet, evenly covering the surface. On the sheet, arrange the salmon patties and brush the tops gently with oil. Place in the oven and bake for about 15 minutes at 425 degrees F. Then, flip the patties and continue baking for another 5 to 7 minutes.
