This is an awesome recipe that can be prepared the night before cooking it. How awesome is that? This is my all-time favourite comfort food. 6 hours of cooking is so worth the wait once you get a bite of its rich flavours! Give it a try and be amazed by how delicious this Taco Pasta is. Enjoy!
1 lb lean ground beef
salt and pepper
1 bell pepper, chopped
15 oz can crushed tomatoes
1 c jarred salsa, mild
15 oz can corn, drained
3 tbsp taco seasoning
2 ½ cups water or low sodium chicken broth, one 14.5 ounce can of chicken broth plus enough water to total 2 ½ cups
12 oz shell pasta shapes, whole grain or white
1 c shredded cheddar cheese
Step 1: Place a large skillet on the stove and turn the heat to medium-high.
Step 2: Add in the beef and cook until brown. Sprinkle salt and pepper to taste.
Step 3: Remove from the heat and place the beef into a slow cooker.
Step 4: Add in the crushed tomatoes, salsa, bell pepper, broth/water, and taco seasoning. Stir until well combined.
Step 5: Cover the slow cooker and cook for 2 to 4 hours on high setting and 5 to 6 hours on a low setting.
