With savory sauce and tender beef, this Spicy Beef Vindaloo is something to brag about to your friends and loved ones! This recipe is super easy to prepare. All you need are these simple ingredients. Always serve this over rice for the best dining experience. Enjoy!
Ingredients:
2 tbsp tomato paste
Salt and pepper to taste
1 small onion chopped
2 c beef stock
2 Serrano peppers chopped, or use Indian peppers if you can obtain them
2 tbsp olive oil or use ghee (more traditional)
2 lbs. beef, chuck, cut into bite-sized pieces
MARINADE:
6 cloves garlic, minced
½ tsp cumin
1 tsp mustard powder
1 tsp paprika
1 tsp coriander
2 tbsp spicy red chili flakes I used ghost pepper flakes for an EXTRA kick
1 tsp ginger
½ tsp cinnamon
½ c white wine vinegar
1 tsp turmeric
Directions:
In a mixing bowl, add all the ingredients for the marinade. Stir until well incorporated.
Add the beef slices into the bowl with the marinade, then toss until completely coated.
Wrap the bowl with plastic, then place it in the fridge. Marinate the beef for at least an hour or overnight.
Place a large pan on the stove and turn the heat to medium. Add olive oil and allow it to become hot.
Add the peppers and onion, then sauté for a few minutes until soft.
Add the beef slices together with the marinade into the pan, then sear each side of the beef for a few minutes until they turn brown.
Stir in the tomato paste and cook for about a minute.
Pour in the stock, then scrape the bottom of the pan to get the browned bits. Stir and simmer for a couple of minutes.
Reduce the heat to low, then cook the beef for half an hour or until tender. Remove from the heat.
Garnish the dish with chili flakes and freshly chopped parsley.
Serve over rice. Enjoy!
Note:
You can add less chili to this dish if you prefer.
