If you are looking for another easy and perfect weeknight meal to serve to your loved ones, these easy stuffed shells are a must! The jumbo pasta shells are filled with a smooth, creamy, cheesy filling flavored with fresh herbs.
In this recipe, I used cottage cheese instead of ricotta cheese as it has fewer calories and fat, plus it guarantees a delightfully smooth consistency. The best part is this recipe is pretty adaptable. For a round-up meal, serve this with a side salad or dinner rolls.
Ingredients
1 egg
1 to 2 garlic cloves – minced
12 oz. jumbo pasta shells
30 oz. whipped cottage cheese or ricotta cheese
6 oz. Parmesan cheese, grated
1 tbsp kosher salt
1 tbsp fresh parsley – minced
28 oz. marinara sauce
¾ c. fresh basil leaves, finely chopped (about 8 to 10 leaves)
8 oz. mozzarella cheese, grated
½ tsp salt
½ tsp fresh ground pepper
How to make Easy Stuffed Shells
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, grease a 9 x 13-inch baking dish.
Step 2: On the bottom of the prepared dish, spread half of the marinara sauce. Set aside.
Step 3: Cook the pasta shells in a large pot of salted boiling water 3 minutes shy of al dente. Drain when done and rinse the pasta shells with cold water. Set aside.
Step 4: Place the whipped cottage cheese, Parmesan cheese, egg, garlic, parsley, basil, salt, and pepper in a large bowl. Mix well until blended.
Step 5: Into the shells, spoon the mixture. In the baking dish, place the shells. With the rest of the sauce, cover the shells and sprinkle with mozzarella cheese.
Step 6: Place in the preheated oven and bake for about 25 minutes or until hot and bubbly.
Step 7: Remove from the oven when done, and serve the stuffed shells right away. Enjoy!
