I never thought that Vegan Mac and Cheese would taste so good! Oh, man, you have got to give this recipe a try, I’m telling you! Feel free to add more ingredients if you wish. Enjoy!
Ingredients:
3 Medium Carrots
2 Large Yukon Gold Potatoes
2 Cloves Minced Garlic
1 box Whole Wheat or Gluten-free Pasta use any pasta of choice
¼ c Nutritional Yeast
2 c Broccoli Florets
1 teaspoon Apple Cider Vinegar
1 teaspoon Dijon Mustard
2 tablespoons Freshly-Squeezed Lemon Juice
½ teaspoon Kosher Salt
¼ teaspoon Ground Pepper
⅛ teaspoon Turmeric Powder
½ teaspoon Paprika
Directions:
1. Rinse and clean the carrots and potatoes. Make sure to remove the dirt.
2. Use paper towels to pat them dry.
3. Peel the carrots and potatoes, then slice them into large pieces.
4. Place a large pot with about 1-inch of salted water. Add the chopped carrots and potatoes.
5. Turn the heat to high and allow the water to boil. Cook the veggies for about 15 minutes or until fork-tender. Remove from the pot.
6. Add the broccoli into the same pot, then cook for about 3 minutes or until fork-tender as well. Drain and set aside about 1 cup of water.
7. Refer to the directions provided on the package of the pasta on how to cook it.
8. Meanwhile, add apple cider vinegar, garlic, lemon juice, paprika, turmeric, salt, and mustard into a mixing bowl. Stir until well blended.
9. In a blender, add the carrots, potatoes, 1/2 cup of reserved water, and nutritional yeast. Pulse until well combined.
10. Transfer the mixture into the bowl with the vinegar mixture, then stir until well blended. Add more water if needed.
11. Transfer the cooked pasta into a large bowl as well as the steamed broccoli.
12. Pour the delicious over the pasta and broccoli. Toss until well combined.
13. Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to one week. Reheat when serving again.
