This Fiesta Chicken Casserole is seriously easy to throw together and it’s made with simple ingredients; chicken, pasta, black beans, corn, seasonings, and cheese! This is always a huge hit at home for great reasons.
Creamy, super cheesy, and delicious! This casserole is the perfect weeknight meal with just enough heat that is excellent for the kids. In this recipe, you can use leftover chicken, rotisserie chicken, or even canned chicken. If you like this casserole spicy, you can use regular or hot taco seasoning to spice this up. As for the cheese, any variety of cheese is fine.
This recipe is absolutely a no-fuss! To serve, I like putting some toppings into bowls and giving my family or guests the freedom to pick whatever they want. My go-to toppings are sour cream and chopped tomatoes.
INGREDIENTS
2 c. Monterey Jack cheese, grated and divided
1 c. sour cream
3 c. cooked chicken, shredded
1 (10 ounces) can Ro-tel, do not drain
2 tbsp taco seasoning
2 tbsp milk
1/2 c. corn kernels
1 c. instant rice
Fresh cilantro, chopped, for garnish
1/2 c. black beans, drained
How to make Fiesta Chicken Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using a nonstick spray, grease a 9 x 9-inch baking dish and set aside.
Step 2: Place the chicken, Ro-Tel, rice, 1 1/2 cups of cheese, sour cream, taco seasoning, milk, corn, and black beans in a large bowl. Mix well until combined.
Step 3: into the prepared baking dish, pour the mixture and top with the rest of the cheese.
Step 4: Using foil, tightly tent the dish. Place in the preheated oven and bake for about 20 minutes. Remove the cover and continue baking for another 5 to 10 minutes until the cheese is bubbly and has melted.
Step 5: Remove from the oven when done and allow the casserole to sit for about 5 minutes before serving.
