These fluffy, fluffy pancakes are the best pancake recipe for fat and fluffy pancakes without special ingredients or buttermilk. If you love making pancakes and want an easy and quick recipe, this is for you! All you need are just a couple of pantry ingredients from the egg, milk, flour, etc. Combine the ingredients and use a 1/4 cup measure to scoop the batter to ensure you get evenly-sized pancakes. Feel free to add chocolate chips to the pancake batter if desired. Or add a handful to the pancakes as they cook for maximum fluffiness! Serve these delicious pancakes, fresh and warm with drizzles of maple syrup.
1 large egg, beaten
1 c. All-purpose Flour, sifted
2 teaspoons Baking Powder
2 tablespoons White Sugar
Pinch of Salt
¾ c. plus 2 tbsp Milk
2 tablespoons Unsalted Butter, melted
Canola Oil (or any other vegetable oil), for cooking
1 teaspoon Pure Vanilla Extract
How to make Fluffy, fluffy pancakes
Step 1: In a bowl, place the flour, sugar, salt, and baking powder. Mix well until combined.
Step 2: Whisk the egg, milk, vanilla, and melted butter in another bowl.
Step 3: Into the dry ingredients, add the wet ingredients, stirring until combined and the batter is thick and a bit lumpy. You can add a little milk if the batter is too thick. Keep the batter aside for about 5 to 10 minutes.
Step 4: Coat a heavy-bottomed, non-stick pan with oil and heat over low-medium heat. Into the pan, drop the batter using a 1/4 c. measuring cup. This will ensure you get evenly-sized pancakes.
Step 5: Cook the pancake until the first side is golden brown or the top surface forms bubbles. Flip the pancake and continue to cook the other side, adjusting the heat as needed. Repeat with the remaining batter.
Step 6: Serve the pancake hot. Enjoy!
