Chicken smothered with a rich sauce; this French Onion Chicken is total comfort food! The combination of all the flavors is perfectly balanced! This recipe will be the best decision you will ever make today. Enjoy!
Ingredients:
1 tbsp olive oil
salt and pepper to taste
2 c beef broth or chicken broth
2 tbsp Dijon mustard
3 tbsp butter
2 cloves garlic, chopped
1 tsp thyme, chopped
1 cup gruyere, grated
2 lbs. onions, sliced
2 tbsp flour
1 lb. chicken breasts or thighs (optionally boneless and skinless)
1 tbsp balsamic vinegar
Directions:
Place a pan on the stove and turn the heat to medium. Add butter and allow it to melt.
Add the onions, then stir and cook for about 3 minutes.
Add garlic, thyme, and flour, then stir and cook for about a minute.
Pour in 1/2 of the broth, then scrape the bottom of the pan to get the browned bits. Stir everything until well blended. Let the mixture boil.
Turn the heat down to low and simmer the mixture for 5 minutes.
Put another pan on the stove and turn the heat to medium-high. Add oil and let it sizzle.
Sprinkle salt and pepper over the chicken, then put them into the pan and sear each side for about 4 minutes or until they turn brown.
Add the other half of the broth into the pan with the chicken, then stir until well incorporated.
Add mustard and balsamic vinegar, then stir again until well blended. Simmer the mixture for about 5 minutes.
Add the onions into a heat-proof pan. Lay the chicken over the onions.
Pour the broth over the chicken. Cover the entire pan with aluminium foil.
Place the pan in the preheated oven and bake the French Onion Chicken for 20 minutes.
Remove the foil cover, then sprinkle the cheese over the chicken.
Broil the French Onion Chicken for a few more minutes until the cheese has melted completely. Remove from the oven.
