Ingredients:
Crust:
1 ¼ c all-purpose flour
¼ teaspoon sea salt
1 tablespoon granulated sugar
½ c shortening chilled
3-4 tablespoon ice water
Chocolate Silk Pie Filling
¾ c butter softened
¼ c granulated sugar
1 c powdered sugar
4 ounces semi-sweet chocolate melted
1 teaspoon pure vanilla extract
Pinch of sea salt
3 eggs room temperature
¾ c whipping cream whipped
Whipped topping
1 ¼ c whipping cream measured in a liquid state, then whipped
½ c powdered sugar
1 teaspoon pure vanilla extract
Directions:
For the Crust:
1. Add the flour, sugar, and salt into the food processor. Pulse until well mixed.
2. Add cold water and shortening, then process again until well combined.
3. Sprinkle flour on a flat surface, then transfer the dough to it. Form a small ball out of the dough.
4. Wrap the ball of dough with plastic wrap, then place it inside the fridge for about an hour or overnight.
5. Prepare the oven and preheat to 225 degrees C or 450 degrees F.
6. Place the dough onto a flat surface sprinkled with flour, then roll it with a rolling pin.
7. Transfer the dough to a 9-inch pie plate. Seal the sides to make a crust.
8. Use a fork to poke small holes over the dough.
9. Place it inside the preheated oven and bake for about 10 minutes or until the top turns brown.
10. Remove from the oven and allow it to cool completely.
For the Whipped Cream Filling:
1. Add 3/4 cup of whipping cream into a stand mixer. Whip until it forms stiff peaks.
2. Move the cream into an airtight container, then place it inside the fridge to chill.
For the Whipped Topping:
1. Add powdered sugar, vanilla, and 1 1/4 cups of whipping cream into a stand mixer. Beat until the texture becomes thick.
2. Beat for another 2 minutes on high speed until it forms soft peaks.
3. Move it into a piping bag, then place it inside the fridge.
For the Chocolate Filling:
1. Put the chocolate into a heat-proof bowl, then place it inside the microwave. Heat until melted completely, then stir and allow it to cool.
2. Add the butter-sugar, vanilla, and powdered sugar into an electric mixer, then beat until well blended.
3. Pour in the melted butter and beat until well mixed.
4. Add egg gradually and beat every addition.
5. Add 3/4 cup of whipping cream, then use your hands to mix everything.
To Assemble:
1. Add the chocolate filling over the cooled crust and spread it evenly.
2. Spread the whipped topping over the chocolate filling layer.
3. Place it inside the fridge to chill for about 4 hours or overnight.
4. Serve and enjoy!
