It is so difficult not to love these Fresh Apple Oatmeal Cookies! They are just simply the best! Take a break from the usual cookies, and try this awesome recipe. Enjoy!
Ingredients:
1 and ¾ c of old-fashioned rolled oats
½ c unsalted butter, softened
¼ tsp ground nutmeg
1 c all-purpose flour
1 c chopped apple
¼ tsp salt
½ c light brown sugar, packed
1 large Egg at room temperature
1 tsp ground cinnamon
1 tsp pure vanilla extract
¼ c granulated sugar
½ tsp baking soda
Directions:
Prepare the oven and preheat it to 175 degrees C or 350 degrees F.
Line parchment paper onto 2 large baking sheets.
In a mixing bowl, add salt, nutmeg, flour, baking soda, and cinnamon. Whisk everything until well incorporated. Add the old-fashioned rolled oats, then stir until well combined.
In another mixing bowl, add granulated sugar, butter, and brown sugar. Beat for about a minute or two or until well incorporated.
Add the vanilla extract and egg, then beat again until well blended.
Transfer the dry ingredients into the bowl with the wet ingredients, then beat until well incorporated.
Add the apple slices, then stir until well combined.
Form small balls out of the cookie dough, then place them onto the prepared baking sheets and arrange them in a single layer. Make sure to leave a small space between each ball.
Place the baking sheets in the preheated oven and bake the cookies for about 12 to 15 minutes or until done.
Remove the cookies from the oven and let them rest for at least 5 to 10 minutes at room temperature.

Notes:
Feel free to use ground cinnamon instead of nutmeg.
Feel free to use any type of apple for this recipe.
Make sure that the eggs are sitting at room temperature before you beat them.
Place any leftovers in an airtight container, then put them in the fridge. They can last up to 2 to 3 days.
