Ingredients:
1 tbsp olive oil
3 tbsp butter, divided
1 1/2 pounds (650g) baby yellow potatoes, quartered
1 1/2 pounds (650g) chicken breast, cut into strips
5 garlic cloves, minced
1 tsp fresh thyme, chopped
Salt and fresh cracked pepper
1 tsp fresh rosemary, chopped
Crushed red chilli pepper flakes, optional
1 tsp fresh oregano, chopped
For the Marinade:
1 tbsp olive oil
Fresh cracked pepper
1/4 c soy sauce (or coconut amino if you’re strictly paleo)
1 tbsp hot sauce (we used Sriracha)
Directions:
1. Add the chicken pieces, olive oil, soy sauce, hot sauce, and pepper into a large mixing bowl. Stir everything until well mixed. Let the chicken marinate while you prepare the rest of the ingredients.
2. Meanwhile, place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
3. Add the potatoes and cook for about 8 minutes. Drain and set aside.
4. Place a large skillet on the stove and turn the heat to medium-high.
5. Add 1 tbsp of butter and 1 tbsp of olive oil, then allow them to become hot.
6. Add the potatoes, then stir and cook for 4 minutes or until they turn golden brown.
7. Remove from skillet onto a clean plate.
8. Add 2 tbsp of butter into the skillet and allow it to melt again.
9. Remove the chicken pieces from the marinade.
10. Add the chicken pieces into the skillet as well as the chilli pepper flakes and garlic. Cook the chicken until they turn brown.
11. Add the marinade and stir until well mixed. Cook for a few minutes.
12. Add the herbs and stir until well mixed.
13. Put the potatoes back to the skillet and stir until well coated with the sauce as well. Add more seasonings if needed.
14. Remove from the heat and transfer onto a large serving platter.
15. Serve and enjoy!
Note:
Garnish with shredded Parmesan cheese, chilli pepper, and freshly chopped herbs.
