GARLIC BUTTER CHICKEN AND POTATOES SKILLET

Prep Time: 10 mins | Cook Time: 20 mins | Yield: 4 Servings

This is the best way to cook potatoes and chicken! The garlic-butter sauce made it extra special. Oh, man, and the cheese? It made it divine! Give this one a try and satisfy your cravings the best way. Enjoy!

INGREDIENTS:

1 1/2 lbs (650g) chicken breast, cut into strips
1 1/2 lbs (650g) baby yellow potatoes, quartered
1 tablespoon olive oil
3 tablespoon butter, divided
5 garlic cloves, minced
1 teaspoon fresh thyme, chopped
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh oregano, chopped
Salt and fresh cracked pepper
Crushed red chilli pepper flakes, optional

Marinade:

1/4 cup soy sauce (or coconut amino if you’re strictly paleo)
1 tablespoon olive oil
1 tablespoon hot sauce (or Sriracha)
Fresh cracked pepper

Directions:

Step 1: In a large mixing bowl, add the hot sauce, soy sauce, olive oil, pepper, and chicken strips. Stir until well combined.

Step 2: Place a pot with salted water on the stove and bring it to a boil. Add in the potatoes and cook for 8 minutes or until fork-tender. Drain and set aside.

Step 3: Place a skillet on the stove and turn the heat to medium-high.

Step 4: Add in 1 tablespoon of butter and 1 tablespoon of olive oil.

Step 5: When the oil is hot, add in the drained potatoes and cook for about 4 minutes or until golden brown.

Step 6: Place the cooked potatoes on a clean plate and set aside.

Step 7: Add another 2 tablespoons of butter into the skillet and allow it to melt.

Step 8: Add in the chicken strips and the garlic and red chilli pepper flakes. Cook for 1 minute on both sides or until brown.

Step 9: Add in the marinade and cook for several minutes until the chicken strips are cooked.

Step 10: Add in the fresh herbs and stir until well blended.

Step 11: Put the cooked potatoes back into the skillet and cook until hot.

Step 12: Add more seasonings if needed.

Step 13: Remove from the heat and garnish with fresh herbs, crushed chilli pepper, and Parmesan cheese.

Step 14: Serve and enjoy!
