Ingredients:
1/2 tsp paprika
1/4 c (60ml) chicken broth, or water
4 garlic cloves, minced
1 tsp fresh rosemary, chopped
1 tbsp freshly chopped oregano
Slices of fresh lemon, for garnish
4–5 chicken thighs, skin-on, bone-in
1 tsp fresh thyme, chopped
Fresh chopped parsley, for garnish
1 lb. asparagus, ends trimmed
1/2 tsp salt and pepper, to taste
3 tbsp unsalted butter, divided
Directions:
Use paper towels to pat dry the chicken thighs. Sprinkle paprika, salt, and pepper over the chicken thighs. Toss until fully coated.
Place a large skillet on the stove and turn the heat to medium. Add 2 tbsp of butter and allow it to melt.
Add garlic, oregano, thyme, and rosemary. Cook for about a minute. Stir until well combined.
Add the chicken thighs, then sear each side for about 5 minutes or until they turn brown. Move them to a clean plate.
In the empty skillet, add butter and allow it to melt.
Add the asparagus, salt, and pepper. Cook for about a minute.
Add chicken broth, then scrape the bottom of the skillet to get the browned bits. Simmer until it reduces to about half.
Put the chicken thighs back into the skillet, then toss until well coated with the sauce.
Simmer the dish for a few more minutes until the chicken thighs are cooked through. Remove from the heat. Sprinkle freshly chopped herbs of your choice.
Serve right away with lemon slices on the side. Enjoy!
