Garlic Parm Chicken and Potatoes is my family’s newest obsession. This is a delightfully creamy one-pot dish that can easily be prep in just fifteen minutes!
This recipe is one of the easiest chicken recipes I’ve tried. This promises amazing results. My family loves this dish so much that this instantly became part of our regular menu rotation.
Enjoy crisp-tender chicken with potatoes and broccoli smothered in a delicious garlic Parmesan cream sauce any time with this easy recipe!
Ingredients
1 tablespoon olive oil
4 skin-on, bone-in chicken thighs
2 tablespoons tomato paste
1 cup chicken stock
1/2 pound baby red potatoes, quartered
4 cloves garlic, minced
1 head broccoli florets
1 cup half and half
kosher salt
Freshly ground black pepper
Chopped parsley, for garnish
1 cup grated Parmesan
1 cup spinach
How to make Garlic Parm Chicken & Potatoes
Step 1: With salt and pepper, season all sides of the chicken thighs.
Step 2: Heat the olive oil in a large skillet on medium heat. Once hot, add the chicken thighs, skin side down, and sear for about 10 minutes until golden and crispy. Flip and continue to cook the other side for another 10 minutes until golden. Set the chicken aside when done.
Step 3: In the same skillet, add the potatoes and season with salt and pepper. Cook undisturbed for about 4 minutes until one side is crispy.
Step 4: Then, add the garlic along with the tomato paste. Stir and cook for about 2 minutes until aromatic. Pour in the chicken broth and add the broccoli. To taste, season with salt and pepper. Stir well and let everything simmer for about 5 minutes.
Step 5: Add the half-and-half, Parmesan, and spinach. Return the chicken to the pan, skin side up. Allow the mixture to simmer for about 15 minutes or until the sauce has reduced and the potatoes are cooked.
Step 6: Before serving, garnish with some parsley. Enjoy!
