I love these zucchini boats. They are an amazing option if you are craving pasta. Filled with shrimp filling that’s almost like a creamy shrimp scampi. Crazy good, it’s no doubt why these Garlicky Shrimp, Zucchini Boats are always a big hit!
Ingredients
2 tablespoons butter
3/4 pound large shrimp, peeled and deveined
4 large zucchini, halved lengthwise
1 tablespoon extra-virgin olive oil
2 tomatoes, chopped
3 cloves garlic, minced
1/4 cup heavy cream
Juice of 1/2 lemon
1 cup shredded mozzarella
1/4 cup freshly grated Parmesan
Freshly chopped parsley, for garnish (optional)
1 teaspoon fresh thyme leaves
How to make Garlicky Shrimp Zucchini Boats
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: In the meantime, score the zucchini. Using a small spoon, scoop the insides, leaving a 1/4-inch thick border intact. Then, chop the zucchini pulp. Set aside.
Step 3: In a large baking dish, place the zucchini boats and drizzle with oil. Season with salt and pepper. On top, sprinkle the thyme. Place in the preheated oven and bake for about 20 minutes.
Step 4: Melt the butter in a large skillet on medium heat. Once melted, add the shrimp and season with salt and pepper. Cook for about 3 to 4 minutes until pink and completely cooked. Let the shrimp cool. Once cool enough to handle, chop them into bite-size pieces.
Step 5: Melt the rest of the 1 tbsp butter in the same skillet over medium heat. Then, add the zucchini pulp along with the tomatoes and garlic. To taste, season with salt and pepper. Cook for about a minute until aromatic. Add the cream, Parmesan, and lemon juice. Continue to cook for another 3 minutes until the mixture has slightly thickened. Take off the heat and gently fold in the shrimp.
Step 6: With the shrimp mixture, fill the zucchini boats and top with mozzarella. Place in the preheated oven and bake for about 10 minutes until the cheese is bubbly.
Step 7: Serve the Garlicky Shrimp Zucchini Boats right away with extra Parmesan and parsley. Enjoy!
