This amazing recipe was given to me by my dear friend. Try it now, friends, and I am sure that you are going to love these heavenly treats!
Ingredients:
Gingerbread Muffins:
1/2 c (1 stick or 115g) unsalted butter
3/4 c (234g) dark molasses*
2 and 2/3 c (335g) all-purpose flour (spoon & levelled)
1 and 1/2 tsp baking soda
1/4 tsp salt
1 and 1/2 tsp ground cinnamon
1 and 1/4 tsp ground ginger
1/2 teaspoon ground cloves
1/2 c (100g) packed light or dark brown sugar
1 large Egg, at room temperature
1/2 c (120g) plain yoghurt or sour cream, at room temperature
1/2 c (120ml) milk, at room temperature*
optional: coarse sugar for sprinkling
Lemon Glaze:
1 c (120g) confectioners’ sugar (or more, as needed)
2 tbsp fresh lemon juice
1 tbsp (15ml) milk
Directions:
Step 1: Prepare the oven and preheat to 220 degrees C or 425 degrees F.
Step 2: Apply cooking spray or line with paper liners in muffin pans.
Step 3: Slice the butter into small cuts and place them into a large microwavable bowl. Add the molasses as well.
Step 4: Place the bowl inside the microwave and heat for about a minute until melted completely.
Step 5: Remove from the microwave and stir until well blended.
Step 6: In a large mixing bowl, add the flour, cinnamon, ginger, baking soda, cloves, and salt. Whisk until well mixed.
Step 7: Add the egg, brown sugar, milk, and yoghurt into the bowl with the butter/molasses. Whisk until well mixed.
Step 8: Transfer the wet ingredients into the bowl with the flour mixture. Whisk until well mixed.
Step 9: Fill each muffin pan with the batter and top each with coarse sugar.
Step 10: Place them inside the preheated oven and bake for 5 minutes.
Step 11: Turn the heat down to 350 degrees C and bake for another 15 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 12: Remove from the oven and allow them to cool at room temperature.
To Make the Glaze:
Step 1: In a large mixing bowl, add all the ingredients for the glaze. Stir until well combined.
Step 2: Drizzle the glaze over the muffins.
Step 3: Serve and enjoy!
Note:
Leftovers can last up to 2 days at room temperature or 1 week inside the fridge.
