Ingredients:
1 cup flour
1/4 teaspoon baking soda
1/4 cup honey
1 tablespoon melted butter
1/2 teaspoon ground ginger
3 Eggs
1/4 cup molasses
1/2 teaspoon cinnamon
Powdered sugar
A pinch of salt
1/4 cup sugar
Filling:
1 teaspoon cinnamon
1/3 cup powdered sugar
1 1/2 cup heavy cream
Directions:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Line parchment paper into a 15×10-inch jelly roll pan.
3. Apply cooking spray and sprinkle flour over the parchment paper.
4. Add egg whites and egg yolks in individual bowls, then beat each.
5. In the bowl with the beaten yolks, add melted butter, molasses, and honey. Beat until well blended.
6. Add sugar into the bowl with the beaten egg whites, then beat until stiff peaks form.
7. Transfer the egg whites into the bowl with the egg yolk mixture, then stir until well blended.
8. Add spices, flour, salt, and baking soda. Stir until well incorporated.
9. Transfer the batter to the prepared pan and spread it evenly.
10. Place it inside the preheated oven and bake for 10 minutes or until done.
For the Gingerbread Roll:
1. Remove the cake from the oven and allow it to cool.
2. Sprinkle a lot of sugar onto a damp tea towel.
3. Turn the pan onto the towel with sugar, then remove the parchment paper.
4. From the bottom, roll the cake up and allow it to cool.
5. In a mixing bowl, add cinnamon, sugar, and heavy cream. Beat until well blended.
6. Unroll the cake and add 2/3 of the whipped cream and spread it evenly. Roll it up once more and add the rest of the whipped cream over and spread it evenly.
7. Sprinkle cinnamon over the cake and let it rest for 1 to 2 hours.
8. Serve and enjoy!
