This recipe is a must-try! Oh, man, you are so in for a treat!
Ingredients:
To Cook Chicken And Make Broth:
1 whole chicken, thawed and cleaned (remove and discard giblets from the cavity)
1/2 c carrots, celery, and onion (OPTIONAL-to flavour the chicken broth)
Water to completely cover chicken in a large stockpot.
To Make The Dumplings:
1 c all-purpose flour
1 tsp salt
2 heaping Tablespoons vegetable shortening
1/2 c HOT water
1/2 c plus 2 Tablespoons all-purpose flour
To finish the soup:
Two large chicken bouillon cubes
1 tbsp butter
1/4 c water mixed with 2 tbsp flour
Salt and Pepper, to taste (approx. 1 teaspoon salt, 1/2 teaspoon pepper)
Directions:
Step 1: In a large pot, add the chicken and vegetables, then add enough water to submerge them.
Step 2: Place the pot on the stove and turn the heat to high, then allow the water to boil. Allow the chicken to cook for about an hour.
Step 3: Remove the skin of the chicken, then slice them into small cuts.
Step 4: Add the 2 1/2 cups of the chicken back to the pot with the broth. Allow it to boil, then add the seasonings. (bouillon cubes, salt, and pepper.)
Step 5: Meanwhile, in a large mixing bowl, add all the ingredients for the dumplings. Beat until it resembles a dough. Form small balls out of it. Allow them to sit at room temperature for 10 minutes.
Step 6: Sprinkle flour on a flat surface, then put the balls of dough on it. Roll the balls to create a large pie crust, then slice it into small strips. Repeat this process to the rest of the balls of dough.
Step 7: Add the dumplings into the hot water together with butter.
Step 8: In a small bowl, add 2 tablespoons of flour and 1/4 cup of water. Stir until well mixed, then pour it into the soup. Stir until well mixed and a bit thick.
Step 9: Add more salt and pepper if needed.
Step 10: Serve hot and enjoy!
