This Greek Chicken with Lemon and Feta is my new favorite! I am so glad that I gave this recipe a try, you should too! It is so easy to make and is ready in less than an hour! Perfect to serve as is or with something. Enjoy!
Ingredients:
1 lb. of thin-sliced chicken breast
½ teaspoon + a pinch of sea salt
¼ teaspoon coarse black pepper
1 lemon, juiced and zested
3 garlic cloves, finely minced, or 1 teaspoon dried garlic powder
1 teaspoon dried oregano
½ teaspoon smoked paprika
¼ c extra virgin olive oil
GARNISH:
Additional wedges of lemon
¼ c fresh chopped parsley
¼ c feta cheese
Directions:
1. Add olive oil, garlic, spices, lemon zest, and lemon juice into a large mixing bowl. Stir until well blended. Reserve 1/4 cup of the marinade.
2. Add the chicken into the bowl with the rest of the marinade. Toss until well coated.
3. Cover the bowl with saran wrap, then place it inside the fridge. Marinate the chicken for at least 30 minutes.
4. Place a nonstick skillet on the stove and turn the heat to medium-high.
5. Add olive oil and allow it to become hot.
6. Add the chicken into the hot skillet, then sear each side for a few minutes or until charred brown. It usually takes 3 to 4 minutes to sear each side of the chicken.
7. Place the chicken onto a clean serving plate.
8. Drizzle the reserved marinade over the chicken.
9. Garnish with feta cheese and freshly chopped parsley.
10. Serve right away and enjoy!
