This goes perfectly well with any BBQ dish! These potatoes are well-seasoned with amazing flavors! A feel-good dish that you can eat pretty much all the time! 50 minutes of cooking time is so worth it once you get a bite of these rich and tender potatoes. This is simply the best side dish ever! Enjoy!
Ingredients:
30 grams feta
1 lemon quartered
4 garlic cloves, crushed
700 grams of new potatoes
1 tbsp dried thyme
1 tbsp fresh thyme
1 tbsp dried oregano
2 tbsp olive oil
0.5 lemon, juice only
A pinch of sea salt and black pepper
Directions:
1. Slice the potatoes into even wedges.
2. Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
3. Add the potato wedges, then par-boil for about 7 minutes.
4. Drain, then put the potatoes into a mixing bowl.
5. Add the lemon, garlic cloves, fresh thyme, dried thyme, oregano, olive oil, lemon juice, salt, and pepper over the potato wedges. Stir everything until well mixed.
6. Empty the bowl into a baking dish and spread it evenly.
7. Add lemon slices on top.
8. Place it inside the preheated oven and bake for about 40 minutes or until done.
9. Remove from the oven, then sprinkle feta and thyme on top.
10. Serve and enjoy!
Notes:
Feel free to add chopped veggies to make this into a main dish.
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 days. Reheat in the oven for 15 minutes.
Feel free not to add feta if you want a vegan version.
You can add fresh dill for more Greek flavors!
