The best-grilled chicken! Tender and juicy chicken breasts marinated in delicious cilantro and lime marinate then grilled. Easily throw this together in less than fifteen minutes and serve with potato salad. This is also amazing in a wrap, pita, or sandwich.
Ingredients
8 Boneless, skinless chicken breasts of about 2 pounds
Marinade:
3 tablespoons lime juice, about 2 limes
3 cloves garlic, chopped
2/3 bunch fresh cilantro
zest of 1 lime
1 teaspoon ground coriander
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
Optional Garnishes:
Lime wedges
Cilantro leaves
How to make Grilled Cilantro Lime Chicken
Step 1: To a blender or food processor, pulse the marinade ingredients until smooth.
Step 2: To a large freezer-safe sealable bag, add the chicken breast and the marinade. Before tightly sealing the bag make sure to press out the air. Around the chicken cutlets, gently press the marinade to coat them well. Place in the fridge for at least an hour or overnight. I prefer marinating overnight as this enhances the flavor and juiciness of the chicken.
Step 3: With some oil, brush the grill or a heavy-bottomed pan, then heat on medium-high. Onto the hot grill, place the marinated chicken breast. Grill for about 5 minutes per side, undisturbed, or until the chicken is cooked through and charred.
Step 4: Before serving, garnish with some fresh cilantro leaves and lime wedges. Enjoy!
Notes:
Use thin-sliced boneless, skinless chicken breasts to make things quick.
To help the meat cook evenly, pound the boneless, skinless chicken breasts to an even thickness.
You can marinate the chicken for at least 1 hour, so the flavor seeps in and helps tenderize the chicken breast.
To keep the chicken at a safe temperature while marinating, place the marinating meat in the fridge.
To prevent overcooking the chicken, cook them straight from the fridge.
Before adding the chicken, make sure to lightly brush the grill with some oil to prevent the chicken from tearing when flip.
If desired, reserve some of the marinades to drizzle on top of the chicken before serving.
