Oh, my! I have never had a meal this good before! I highly recommend you give this one a try! In less than 30 minutes, you are going to enjoy this Ground Beef Stuffed Pepper! Ingredients:
3 cloves garlic, minced
1 pound ground beef
14.5 ounces diced tomatoes
1/2 onion, diced
1/2 c green bell pepper
3/4 c white rice, I use Jasmine
2 c beef broth
1 teaspoon Italian seasoning
2 tablespoons tomato paste
1 1/2 c cheese
1/2 c red bell pepper
1 tablespoon parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions:
1. Place a skillet on the stove and turn the heat to medium.
2. Add the ground beef and onion, then cook until brown. Discard any excess grease.
3. Add the rice, bell peppers, beef broth, Italian seasoning, tomato paste, tomato slices, salt, and pepper. Stir until well mixed and allow the mixture to boil.
4. Turn the heat down to low and simmer for 18 minutes or until the rice is tender.
5. Use a fork to fluff the top of the rice.
6. Sprinkle a generous amount of shredded cheese over the rice.
7. Cover and cook for a few more minutes until the cheese is melted completely.
8. Sprinkle freshly chopped parsley on top.
9. Serve hot and enjoy!
