This ground beef stuffed pepper skillet is an amazing one-pan dinner you can easily make in less than thirty minutes! A hassle-free version of the stuffed peppers with all the same flavors. This is already a complete meal by itself, but if you want to serve this with a side dish, roasted green beans, salad, or mashed potatoes are great options!

Ingredients
3 cloves garlic, minced
1 pound ground beef
1/2 onion, diced
2 tablespoons tomato paste
1/2 c. green bell pepper
1/2 c. red bell pepper
3/4 c. white rice – I use Jasmine
2 c. beef broth
1 teaspoon Italian seasoning
14.5 ounces diced tomatoes
1 1/2 c. cheese
1 tablespoon parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
How to make Ground Beef Stuffed Pepper Skillet
Step 1: In a skillet, cook the ground beef with onion and garlic over medium heat until the meat is cooked through and no longer pink, crumbling the meat as it cooks. Drain and discard the grease. Return the skillet to the heat, then add the bell peppers, diced tomatoes, rice, beef broth, tomato paste, Italian seasoning, salt, and pepper. Stir well and bring everything to a boil.
Step 2: Decrease the heat to a simmer. Put the lid on and cook for another 18 minutes until the rice is completely cooked.
Step 3: Using a fork, fluff the rice and sprinkle the shredded cheese on top. Replace the lid and allow the cheese to melt on low heat.
Step 4: Serve right away garnished with some fresh parsley. Enjoy!
Note:
To make this recipe, I use Jasmine rice. You can use any uncooked long-grain white rice.
