I love these ham and cheese puffs! Flaky and buttery puff pastry housed a mixture of delicious hot ham, melty Swiss cheese, and fresh spinach. These delightful ham and cheese puffs are perfect to serve for breakfast, lunch, or dinner.
Ingredients
2 c. cooked ham, diced
2 tbsp unsalted butter
1½ c. Swiss cheese, grated and divided
2 tbsp all-purpose flour
1 c. whole milk, room temperature
¼ tsp pepper
2 c. fresh spinach
1 large egg white, lightly beaten
¼ tsp kosher salt
2 sheets frozen puff pastry, thawed according to package directions
How to make Ham and Cheese Puffs
Step 1: Prepare the oven. Preheat it to 400 degrees F. Using parchment paper, line a large baking sheet and set aside.
Step 2: Into 5-inch (13cm) squares, cut the puff pastry sheets. Place in the fridge.
Step 3: In a saucepan, melt the butter over medium heat. Once melted, add the flour and salt. Cook for about a minute, stirring often. Then, gradually pour in the milk until smooth and boiling, stirring constantly.
Step 4: Adjust the heat to low and let the mixture simmer until it starts to thicken, stirring often.
Step 5: Into the pan, add the spinach and continue to cook for another minute until wilted. Then, add the ham along with 1 c of Swiss cheese. Stir well, then take the pan off the heat and set aside.
Step 6: On the prepared baking sheet, evenly arrange the puff pastry squares. On top, place a heaping spoonful of ham and cheese mixture, then sprinkle with grated cheese.
Step 7: To form a smaller square, fold the corners up onto the top.
Step 8: Using the egg wash, brush the pastry, coating all sides. Place in the preheated oven and bake for about 18 to 20 minutes or until golden and puffed.
