I love these breakfast cookies. They are the perfect low-carb breakfast cookies similar to an omelet and biscuit in one. These biscuits are an excellent on-the-go breakfast with only 2.9 grams of net carbs a piece!
These are delicious cookies! The best part is they are low-carb, gluten-free, and grain-free. These biscuits are made with my favorite breakfast ingredients I use to make omelets; sausage, onions, pepper, and of course, cheese. If you want to kick your day with a healthy breakfast, these savory keto breakfast cookies are the perfect option!
INGREDIENTS
3 eggs
4 ounces of pork sausage
½ c. green peppers, chopped
½ c. onion, chopped
¾ c. almond flour
1 tsp baking powder
1 c. cheddar cheese, shredded
½ tsp salt
½ tsp pepper
HOW TO MAKE HEALTHY SAVORY KETO BREAKFAST COOKIES
Step 1: Prepare the oven. Preheat it to 375 degrees. Using parchment paper or a silicone mat, cover a baking sheet.
Step 2: Cook the sausage with onions and pepper until the sausage is browned and the veggies are tender. Remove from the heat when done and allow to cool.
Step 3: In a bowl, combine the almond flour, salt, pepper, and baking powder.
Step 4: Beat the eggs in another bowl. Then, add half a c. of the cheese. Add this to the flour mixture and mix until blended. Next, stir in the cooled sausage mixture until well incorporated.
Step 5: Onto the parchment paper, place a big scoop of the mixture, gently pressing it down to slightly flatten. On top, sprinkle the rest of the cheese. Repeat with the remaining mixture.
Step 6: Place in the preheated oven and bake for about 8 to 10 minutes.
Step 7: Keep the breakfast cookies in the fridge or freeze them.
