How to make Herb Marinated Lamb Chops
Step 1: Generously season the chops with salt and freshly ground pepper.
Step 2: In a small bowl, place the thyme, oregano, rosemary, mint, garlic, and olive oil. Mix well to make the marinade.
Step 3: Over the lamb, rub the marinade, massaging it into the meat. Marinate at room temperature for 20 minutes.
Step 4: For about 30 seconds, heat a large skillet on high heat. Then, drizzle in the olive oil. Adjust the heat to medium-high, then add the chops. Sear for about 3 minutes until the first side is well browned. For medium rare, the internal temperature of the meat should reach 57 degrees C or 135 degrees F. Flip the chops and continue to cook the other side for additional 3 to 5 minutes.
Step 5: To a warm plate, transfer the chops and let them rest for about 5 minutes.
Step 6: Serve the Herb Marinated Lamb Chops with some lemon wedges and green salad on the side. Enjoy!
To cook on the BBQ:
For direct cooking, preheat the grill (barbecue) on medium heat. Then, grill the chops for about 3 to 4 minutes on each side until slightly charred, keeping the lid closed. Before serving, leave the chops to rest for about 5 minutes. Serve the chops with lemon wedges on the side.
