½ c white wine
Italian seasoning (divided)
3 garlic cloves, chopped
3-4 thyme sprigs (leaves only)
½ c heavy cream
Salt and pepper
3 pounds chicken thighs, bone-in, skin-on
Salt and pepper to taste
2 tbsp butter
1 tbsp flour for thickening the sauce
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a large skillet on the stove and turn the heat to medium-high. Add 1 tbsp of olive oil and allow it to become hot.
Sprinkle Italian seasoning, salt, and pepper over the chicken thighs. Toss until fully coated. Place them into the hot skillet, then sear each side for about 5 minutes. Transfer to a clean plate.
In the empty skillet, add 2 tbsp of butter and allow it to melt.
Add the onion, then sauté for a few minutes until a bit caramelized.
Add garlic, thyme, and 1 tsp Italian seasoning. Sauté just until aromatic.
Whisk in 1 tbsp of flour and cook for about a minute.
Add wine, then scrape the bottom of the skillet to get the browned bits.
Add heavy cream and chicken stock, then stir until well blended.
Put the chicken thighs back into the skillet, then toss until well coated with the sauce.
Place the skillet in the preheated oven and cook the chicken further for 35 minutes. Remove from the oven.
Sprinkle freshly chopped thyme on top.
Serve over rice, roasted veggies, or mashed potatoes. Enjoy!
